- Q?What is Gluten?

Gluten is a protein composite found in foods processed from wheat, including (but not limited to) barley, rye, kamut, spelt, and malts. While gluten is typically found in wheat and other members of the grain family, it is not synonymous with grain. In fact, many kinds of grains don’t even include a molecule of gluten. For instance amaranth, oats, buck wheat, and soybeans are all gluten free foods, though you should be aware that many of these foods may be processed in facilities that contain gluten. Gluten is also used as a stabilizing agent or thickener in products like ice-cream and ketchup, and in cosmetics such as lipstick, lip balms, and lip gloss.

Unless you have an allergy or aversion to wheat, gluten is NOT bad for you. It can be enjoyed, like everything else, in moderation!
